So far we've seen such problem only when the source datastore (where the backed up VM resides) had problems and the data inside the snapshot had been changed while the backup was run (i.e. the datastore corruption caused the base virtual disk to be changed in time, while it should not). You should first of all check the datastore connected to ESXi host for problems and if none found then try disabling "deduplication" option in the backup settings (the backup process would be less sensitive to data read workflow then and can overcome the possible faulty reads).
