upgrading a copy OS leaving original OS not upgraded

I wish to upgrade from XP pro to 7 pro and I have brought an upgrade disc to do this, but I would like to leave XP pro as original.

So, I have made a copy of XP OS to use for upgrade, but I do not know if the upgrade will also upgrade the original as they are on the same disk / partition, or just the OS version I am booted in at time of upgrade (copy XP)?

I have cloned OS hard drive to USB external drive as a contingency, but OS selector will not boot it. Is this because it is via USB and would need to cloned back to hard drive again to be usuable should the upgrade go wrong?

Finally, thank you in antisipation for any light you can shed on this query and does anybody know if any answer will also work for the same upgrading of MS office 2003 pro to office 2010 pro?
