How do I erase and restore

I have an app that is messing up my system and it doesn't appear in the list of deletable apps.  I thought restoring to an earlier date would get rid of it.  Well, it got rid of some, maybe all, of the stuff causing problems but the app (and any associated files) is still there.  What I would like to do is delete the directories I want to restore before I restore them, thereby getting rid of the stuff I don't want.  Is this possible?  If so, how do I do it?
