Passport image backup does not contain Outlook.pst or the AppData folder
I had a Win7 hard down go down.
I was trying to use my image backup to restore my Outlook 2007 outlook.pst file into a new Outlook 2016 but the usual link for the .pst file of:
c:\Users\(name)\AppData\Local\Microsoft\Outlook\Outlook.pst
can not be found. (especially the AppData folder)
What happened to it and is there somewhere else I can find my Outlook.pst file?

Output *.ost files cannot be backed up (see here), however it does not mention *.pst.
On some installations Outlook some *.pst are stored in OneDrive\Documents\Outlook. Not sure if that will help or not.

The c:\Users\(name)\AppData\ directory is hidden, so you you may need to unhide it.

I checked backups made various times this year looking for backups of *.pst files, and the directory only contained ones related to imported calendars. I am using Microsoft 365 (previously called Office 365), and Windows 10 Pro x64 - some backups were made when running ATI 2021 beta and Windows build 2004, others were made using ATI 2020 and the prior Windows build. This was for disks and partitions backup of my OS NVMe SSD.
This is consistent with a recollection on my part that ATI does not backup *.pst and *.ost files when backup is made from within Windows. I think that is way a invested in a standalone app to backup my Outlook files.

Just had the need to test recovery of files in a files & folders backup; as suggested in the user guide *.pst files were backed - ones in the Outlook folder under Documents. The backup task was created with ATI 2020, and the recover date was before I moved to the ATI 2021 Beta. As noted above, I am using Microsoft 365 for business which may have different defaults for the location of backups. See discussion in this thread.
