I have a m.2 256 GB drive as my os drive and I want to upgrade to a 1 TB m.2 drive. What is the best method to copy the data.

The best way is to perform a full non scheduled dis backup of all partitions of your 256GB drive to an external disk.

Create and use bootable Recovery Media using the Media Creation tool provided in the apps Tools section.

Remove your 256GB drive from the computer and install the new 1TB drive.  Attach the external drive where the backup is located to the computer then boot the computer to the Recovery Media you created.  Use the recover function of the app to recover the backup to the new drive.

Yes, that is the way I would proceed. It is always a good idea to create a backup before replacing a system drive.
