What to do after initial backups

I have 5 systems backed up with initial backups image files with 30% of 1 TB available. How do I do differential backups from here on in?

In your backup task, click on Options then open the Backup Scheme page where you can select from any of the available backup schemes, including making differential backups.

Normally you would do this when first creating a backup task as all tasks must create an initial Full backup file first before then creating any subsequent incremental or differential files.

Are we talking local our Cloud backups?  Cloud backups will always be incremental after the original is complete.  Basically, it will only backup changes since the last backup has completed.  There is no option in the cloud backup to change this behavior as Acronis has configured this by design to try and be the most efficient for the Cloud.  

Local backups (to another internal drive, usb drive, network share, or NAS) can change the backup scheme, retention and cleanup rules, as mentioned by Steve, up above. Keep in mind though that differentials will continue to get bigger over time too.  And once you reach your differential limit (let's say you keep 10 in a chain), it will need enough space to create at least one more NEW FULL before any automated cleanup rules will go into effect.
