Cloning a MacBook Pro to a smaller drive

My daughter has a MacBook Pro (I'm a long term PC guy) with a 320 GB drive that is heading south. I was able to create a backup image on a 64 GB USB stick (~55 GB of the 320 GB utilized). I created another recover media USB stick and was able to boot with a fresh hard drive. It appears the original drive is in three partitions:

disk0s1 EFI (200 MB)

disk0s2 Macintosh HD (297.29 GB)

disk0s3 Recovery HD (619.9 MB)

The fresh hard drive is a 250 GB SSD. I was able to back up the first partition (EFI), but I could not select the main partition or recovery partition. I know the SSD is smaller than the original but the original has LOTS of unused space. In a PC environment I can use a smaller drive.

Will ATI 2015 allow me to migrate the 320 GB backup to the 250 GB SSD? If so, what am I (or did I) doing wrong that prevents me from continuing beyond the first partition?
