I use Recovery Disk only - should I upgrade from ATI 2013?

I use the boot-time imaging form ATI 2013 boot (rescue) disk only.

I haven't installed any "Windows" software from ATI2013 on to my Win 7 64 bit PC, which has 3 internal SATA drives, 1 SSD, and an external e-SATA dock that I use for off-site storage of my files. The PC boots from one of the internal SATA drives.

Has there been any improvements/enhancements to the Rescue disk in ATI 2014?

Should I upgrade if all I'm interested in is the creation and restoration from the boot-disk?

If your recovery CD works well, and you use it for your backup needs, no need to change. I don't know of any capabilities added to the recovery CD. The key new feature of ATI 2014 is the ability to backup disk images to the Acronis cloud.
The key point of the recovery CD is that it works on your computer. For some reasons, sometimes a newer version ends up supporting a different set of hardware configuration.

I have backed up my disks many times, but never had the gumption to try a restore.
I'm going by faith that the restore will work when the time comes.

The best thing to do is to restore a couple of files from your partition backup. In particular if you have partial backups, it is a quick and dirty way to verify the integrity of the backup chain. A better way is to do a full validation. A validated backup ran from the CD where you have tested the recovery of a couple of files makes you much more confident you can recover the whole thing.
