i can see the pst files but not the ost files.

if i'm just copying the ost file i can see in my destination disk .

Microsoft has decided that ost and oab files don't need to backed up because they are downloaded from the Exchange server if missing. The Volume Shadow Copy service follows rules at HKLM\SYSTEM\CurretControlSet\Control\BackupRestore\FilesNotToSnapshot. You can delete or modify the values at OutlookOAB and OutlookOST to force these files to be backed up.

I was using 2014 until Dec 9, 2015 and the Dec 9th backup does have my Outlook .ost files included.  I upgraded to 2016 and now my backups do not include the .ost files even though they are still selected in the source files list in the folder C:\Users\Kevin\AppData\Local\Microsoft\Outlook.   This worries me since there is no indication that they are not backed during the backup process and the validation passes with only 1.5MB backup up of the 1GB outlook files selected.  Why did it work in 2014 but not in 2016 when Acronis says it is a Microsoft issue?  I have been using Acronis for 5 years and have recovered by system disks 3 times so have been very satisfied however I am now worried other files will not be backed up if I continue to use the 2016 version.

TI started using the VSS service in TI 2015. It was not used in TI 2014. That explains why.
