Media builder, Acronis Backup for VMware
I have two questions.
1. Is there a way to create the boot disk to boot with UEFI instead of BIOS?
2. I was able to boot with Legacy BIOS enabled, received the Linux load files and the initial splash screen with patent information and then the screen goes blank so I suspect the video driver will not run the card. Is there a way so slipstream a video driver on the boot disk?

We have recently run into the exact same issue as described by the OP when trying to recover a server - we were able to use the VMWare Media Builder to create bootable media, however this only works on older hardware, not newer machines (including the machine we needed to recover).
Could you please supply a link to the UEFI ISO as it seems to me that is the solution we also require.
