how do you restore to wireless only device
How do I restore to a wireless only laptop ?
I've followed the guides and created a win PE USB boot stick, seemingly adding the correct wireless drivers to it but when booted to it there is no wireless connection (i.e. I cant see anything on my network) and my router doesnt show it as a connected device.

In the long run, I'd go the USB to ethernet adapter as well - so much easier and for about $15, is a very useful tool to have on any system that only has wireless capability. There is so much that can go wrong with wireless when needing to do large backups or recovery (interference, dropped connections, router/switch can't keep up with the wireless traffic due to too many wireless devices on the same band at a time, etc.).
FYI, WinPE does not have native wireless support, only WinRE. Technically if you build default WinPE in True Image it "should" use your WinRE environment, assuming it is there and working correctly. You can try to build WinRE or WinPE using the MVP tool and slip in additional drivers as well. All of that takes time and effort and may or may not have successful working wireless in the end anyway. For $15, a USB to ethernet adapter can be well worth it's weight in time and effort saved.

Everything said there is true, but the MVP WinPE Builder does build a recovery medium with wireless support and I have done recovery across a wireless connection using it a couple times. Admittedly, this was to test the function rather than out of necessity, but it worked flawlessly.
Other people have had less success, I guess (and the authors apparently do not recommend its use for wireless recovery).

When you said " win PE USB" did you mean you were using the MVP WinPE Builder, or were you using the Rescue Media Builder in the ATI GUI? The official function that is built into ATI does not have wireless support. If you are using the MVP WinPE Builder you may have to pick the ADK option. (I know I have to.)

You need to use the MVP Tool. You must read the instruction to get wireless to work found in the !!!!README!!!!_WiFi_Support!!!.txt file. You need to copy WinRE.wim into the WinRE\x64 folder and it must match the version number of the ADK you have installed on your system. Instruction for obtaining WiRE.wim are included. If everything is correct, you will see a question asking if you want to include WiFi support during the build. If you don't see that question, you have done something wrong.

I used the rescue media builder ..... main menu, tools (the 4 small squares) then followed the rescue media builder/advanced/win pe based media/ windows recovery environment.....presuming that to be correct
what and where is the MVP tool you all speak of ?
what is MVP ?

Here: MVP WinPE Builder
MVP = Most Valuable Person/Player
Take the designation with a grain of salt for some of us, but it's definitely warranted for the team that put together the MVP WinPE Builder:
Creators: Mustang, Bobbo_3C0X1
Collaborators: Steve Smith, Enchantech

Not so David, the Acronis Rescue Media tool provided by Acronis does a good job of creating rescue media that works for the majority of users, including offering options to inject additional device drivers as needed.
The MVP Custom PE tool builds upon the Acronis tool by adding in other 'nice to have' extras that Acronis cannot offer to users directly. These include a PE Desktop environment with a file manager, web browser, PDF viewer, image capture, as well as the ability to add BitLocker support plus other PE tools from other vendors.
For myself and the other MVP's, these extras make this media our 'go to' tool of choice because it can offer so many different tools in one package. I have added CCleaner, Minitool Partition Wizard (PE), Recuva, Speccy, KeePass, CrystalDiskInfo plus VeraCryptPortable in my MVP Custom media. This is in addition to all other Acronis applications being included by default if they are installed on the PC making the media, so Disk Director 12.5, AUR, Revive are included in my media too.
