How to exclude a folder ?

How to exclude a folder? Not just file types but complete folders with everything in it.

My setup: Acronis True Image Home 2011.

5 Win XP PCa are scheduled for full image backup with backup verification once a month. Backup is created on a NAS drive.

Question:
I want to have 3 folders excluded from my backup.
Not specific files. How do I do that?
c:\Documents and settings\Username\My Documents
c:\Documents and settings\Username\Email
c:\Documents and settings\Username\Desktop

Those folders are scheduled for backup 3 times per week by a separate task. They are huge and I want to have a smaller size of my image by exuding them from my full image backup..

"You may exclude certain files and folders from backup. For example, you transferred some
movies from your DVDs to a folder on the data partition. They occupy quite a lot of space and it
doesn't make sense to back them up because you have the DVDs. To exclude the folder, click the
Add link to the right of Exclusions and add the folder to the excluded items list. "

There is an exclusion option on the main task page. This option is located just above where you select the destination location.
