Backup server then restore to same drives but changing the size of the partitions

Your plan is very reasonable, and of course you can restore with resizing. I'm glad to inform you that we have an article with the step-by-step screenshots, describing the restore with resize process, you can find it here. Basically, you will need to select partitions for recovery one by one instead of entire disk restore. This will allow you to change the size of the partition to the desired one, and select the next volume for recovery. Repeat these steps with all the partitions, and proceed with the restoration.
