Is There A List Of Programs That Can't Be Migrated to Different Hardware
We are upgrading one or two of our home computers, Acronis True Image with the Plus Pack.
The list of applications supported (http://kb.acronis.com/content/4232) only includes older versions of Adobe products, Visual Studio, and some other applications. For example the listed Adobe products are CS3, the current version is CS5.
Is this because they aren't 'officially' supported or because they actually don't migrate with the software, always requiring a manual installation?

The application has a licensing program. The question is does it put all the files and setting necessary for the application to run.

Activation would most likely be lost. You may want to deactivate it on the old computer first.
Unless the programs are tied to specific hardware on the old computer, I think they should move okay. If you're trying to do an XP to Windows 7 type move, that won't work with TI.

It is Q6600 /NForce 780i to Sandy Bridge/P67, Vista 64 Ultimate to Win7 Ultimate.
I really need to know which programs will be transferred and which will have to be installed and which won't.

You will need to reinstall most Windows apps. TI is not designed to "move" installed programs from one version of Windows to another.
