Should be possible with offline bootable recovery media - however, I have not tried with ATIH.  Server OS is not supported, but that is primarily for the installation of the application in the OS and not related to the offline backups which just backup up the contents of the drive "as is" at that point in time.

The trial won't let you backup with the trial bootable recovery media. You could purchase, test and if not satisfied, request a refund within 30 days of purchase.  I don't see why this wouldn't work for you though.  When you restore the image, it will make the rest of the disk usable (extend the parition on the fly).  Or, you can keep it like the original and then use Windows disk management to expand the parition if need be.

There isn't much risk.  Backup the original drive and save the backup elsewhere.  Restore the backup to the new drive.  Swap out the old drive with the new one and boot and see what happens.  If it doesn't work, just put back in the original drive.
