Bootable disc, file backups

Acronis 2011 Windows 7 x64

1. I would like to make a backup which will be bootable if restored. The option to make the backup bootable is greyed out and not available. How do I do this?

2. Can I recover individual files from a disc backup or do I have to do a separate file backup?
