Clone from big to a smaller HDD

Hello,
I have cloned a 500GB HDD to a 1TB HDD in order to have a backup for my laptop.
Ok, I have a clone, and it is normal to do this from a smaller to a big HDD, no problem this far. But, what if I need to do the rollback procés? Could I clone the 1TB HDD to the 500GB HDD again with Acronis True Image 2018? Of course, I don't need all partitions, only the one which contains Windows OS.
If i have my 500GB HDD, and Windows OS partition from the 1TB HDD is, for example, 350GB. Then, If I have ion my 500GB HDD a 500GB partition, could I clone again? How can I choose the partitions I want to clone by using Acronis True Image 2018 (of course, I am not going to copy the entire 1TB HDD to a 500GB HDD, is imposible)?

Thank you for your last message. I will take the advice for future backups.
But, anyway, if I want to clone as I said from 1TB HDD to 500GB HDD, how can I choose THE partition I want to clone with Acronis True Image (because I can't clone the entire HDD in this case and, as you said, the partition in 500GB HDD needs to fit with the one in the 1TB HDD).

Cloning is really intended to work on a whole disk drive in order to create an identical copy of the source on a target drive, as described in the ATI 2018 User Guide: Disk cloning and migration
You cannot exclude partitions from a clone operation, only Files or Folders can be excluded.
See the User Guide: Clone Disk wizard and read Step 8. of the procedure where it states:
- [Optional step] On the What to exclude step, you can specify files and folders that you do not want to clone. Refer to Excluding items from cloning for details.
If you need to exclude one or more partitions from your larger HDD drive, then you will need to use the Backup and Recovery method, where you can do this.

I agree with Steve that the only way to move some but not all of the partitions is by Backup and Recovery. You will need to make sure that the recovery partition and EFI system partition (if there is one) are recovered to the new disk. The EFI partition will not be present if your computer uses BIOS rather then UEFI.
