Error while backing up
I am receiving a range of errors when backing up certain folders, and as I click ignore, or ignore all, it just gives me more errors. At this point I am not sure if I have a valid backup or if it is faulty.
The error looks like (actual folder names were removed from this post):
Computer to K Drive Backup task is waiting for user interaction. Description: Information: Failed to back up file or folder 'G:\folder\folder 2\folder 3\folder 4\folder 5\folder 6\file.jpg'. It may be blocked by another application. Details: An error occurred while reading a file. The backed up file in the backup may be corrupted and will not be recovered correctly.

Then the backup seems to end, but I don't know if its full (I don't think it is) and trying to figure out what is causing it.

Prior to running chkdsk you should perform a simple Restart of the PC using the Power Options menu in Windows. You will get errors like this when a Windows update has failed to install correctly. A restart can most times fix that issue.

Thank you for the replies @stevesmith & @enchantech. I just got back from vacation so did a combination of a restart (since my computer was off) and ran CHKDSK G: /F.
I am going to run a backup now on one of my external drives & see what happens. I have 2 drives that I back up to & it takes about a 24+ hours to complete, so I will report back tomorrow with the status.

I ran CHKDSK plus a computer restart, had a backup run to another external drive, and the full backup ran without issue. I tried it again on my main external drive, and same issue, different folders were picked up with errors.
So now I am wondering if it is an external drive backup issue. So trying to sort this out here, but I am leaning that way.

There may be errors or corruption on the external disk. I recommend a chkdsk run on your external drive to make sure all is well there.
