Best Practices, Setting up backup tasks

Hello,
I would like to schedule a weekly full back up, followed by daily incremental (or differential?) backup on an external hard drive. At the end of the week I would like to create a new full back up, deleting the old set and start the process over. Is there a way to automate this whole procedure so I do not have to manually delete old sets? I assume this is pretty common backup plan, is there a best practices document that explains how to do it?
