We've got a very old computer that runs some phone software in DOS. Can this software make an image of DOS?

Bootable media probably won't run on this old computer, so you will have to connect this hard disk to some other computer with Acronis installed. FAT32/FAT16 filesystems are supported, but anyway perform test recovery to some other HDD, at least after first backup.
