Ok. Let me try this.
An incremental backup backs up all the changes from the last backup, whether it is a full or an incremental.
A differential backup backs up all the changes from the last FULL backup. So changes accumulate, and the differential backups get bigger and bigger.

To restore your computer from incremental backups, you need the full and all the following incrementals until the date of restore. From a differential, you just need the first full and the last differential, since all the changes are in that one.

Do an incremental backup of your email folders. Do a new full every now and then so that th enumber of incremental is below 10.
