SSD Migration

I want to migrate Windows 7 OS, programs and some games to a 256gb SSD and leave the rest of my files on my old 1tb HDD with ATI 2014. I know you back up the old drive and then delete file contents to make it fit onto the SSD. But can i select the files from the backup that i want to reinstall onto my old HDD? How do i do this with Acronis? Also do i need to enable AHCI? My MB has a UEFI bios if that makes any difference.

Edit: my new ssd comes with Acronis HD 2014. Can i do all this with it or do i have to buy the full version?
