Take 3TB HD, partitions c to k (9 total), want to put only c,d,e on 500GB SSD

I am getting a Samsung 840 Evo 500GB SSD. I currently use a 3TB Hard Drive. I have partitioned it with 9 partitions (games are on f to k based on genre). I am running Windows 7 Pro SP 1 - 64bit, with AHCI on and using UEFI/Win boot with GPT partitions.

I still haven't seen a clear answer by googling, as to just how this is or can be done.

The Samsung software is limited to just 2 partitions in terms of cloning to the SSD. Acronis only does an all or none cloning (no individual partitions). So how do I get C, D, E plus the windows 7 boot partition (before C drive) no recovery partition to worry about (self built machine) to the SSD and then get it to boot. I know I have to go into the bios and make sure that I tell it which drive is the new boot drive, but of course the better method would be to do a F8 to bring up the boot menu and select the SSD under a UEFI/Windows Managed Boot/Partition.

The second problem, I don't want to delete c,d,e on my 3tb just in case the SSD ever fails or it simply doesn't work out for me. Can I remove the drive letters from the Mechanical HD (C,D,E) in order for Windows 7 on the SSD to see itself as boot, and then the remaining partitions, F,G,H,I,J,K from the 3TB Mechanical?

I have Acronis 2011,2012,2013 and 2014 True Image Premium (in case an older version works better). I don't have the disk director program. I really only go cloning aka ghosting of my drive so that I always have an actual clone of my master I put away in case the drive I am using ever dies on me suddenly (learned the hard way many, many years ago). But beyond that, I am not well versed in the techniques beyond that.
